Which format do I want?
SRT works in almost every player and TV. Take it when in doubt.
WebVTT is what browsers and HTML5 video players read.
ASS carries fonts, colours and positions. Converting ASS to SRT keeps the words and the timing and drops the styling; italics and bold travel from SRT to ASS.
